Creamy Potato Vegetable Soup

I was the last at my work to get sick this season, but I didn't just get a cold, I got pneumonia. I am still not 100% yet, but am doing much better. While sick, I did not eat too much, but soups were a staple. Mostly I ate canned soups (which I don't think are very good) but when I had a little more energy I did get around to making my own. My original idea was a potato dill soup, but somehow that turned to this instead. Get your soup on before the sun comes back.

Creamy Potato Vegetable Soup

3 cups Potatoes, chopped
1 Red Onion, chopped
2 medium Zucchini, chopped
3 small Squash, chopped
4 cloves Garlic, minced
2 Tb. Vegan Margarine
1/2 tsp Garlic Granules
1/3 cup Nutritional Yeast
3 cups Coconut Milk (I used So Delicious)
2 cups Broth
Salt & Pepper to taste

Boil potatoes until soft. Drain off liquid until there is about 1/2 cup of water still in pot. Mash potatoes until half mashed, half has some texture. Add half margarine, garlic granules and nutritional yeast. Set aside.

Saute the onion in half the margarine until soft. Add the garlic, zucchini and squash and cook until slightly browned. Add the potato mixture, coconut milk and broth. Add salt and pepper to taste. Heat until hot and serve with bread or a salad.

Betty White Party with lots of food


Betty White has done a lot for animals in her lifetime and she has also delivered a great amount of laughs. When a campaign to see her host Saturday Night Live appeared on facebook, I joined right away. And when she was finally announced to host SNL, I organized a party right away. When I throw a party, what food I will serve becomes my first planning task. I have a few friends that eat gluten free, so I did know I wanted a least most of it to be safe for everyone to eat.

I decided on a host of dips and stuffed stuff. This included my popular Roasted Red Pepper Cashew Spread, White Bean Artichoke Heart Dip and Tofutti Sour Cream with a Frontier Organics French Onion Soup dry mix.


I also served zucchini stuffed with a garbanzo tahini mash and small red potatoes stuffed with tofu celery salad. I served multiple veggies as well including cherry tomatoes I had hoped to stuff with guacamole but that became too much work, so I offered them for snacking instead.

For dessert I offered strawberries, a vegan whipped cream, sweet mini biscuits and cheesecake bites with an almond meal crust (gluten free).

Vegan Cheesecake Bites

Filling:
1 – 8 oz container Tofutti Cream Cheese
½ cup blended Silken Tofu
1/3 cup Organic Unrefined Cane Sugar
2 Tb Cornstarch
1 tsp Vanilla

Crust:
1 ½ cups Almond Meal
1 Tb Cornstarch
2 Tb Margarine, melted
1-2 Tb Almond Milk

Filling: Blend all ingredients in a food processor or blender until smooth.

Crust: Combine the almond meal and cornstarch. Using a fork, blend in the margarine. Add the almond milk until the meal starts to hold together when pressed.

Place about a tablespoon of the crust in a greased mini cupcake holder and press down. Filling the cupcake holder until about full. Bake at 350 degrees for 25 minutes. Allow to cool before serving.

Luckily SNL with Betty White was hilarious and wondrous and the food was enjoyed between the laughs.

A Tasty Brunch


The girl I have mentored for over 5 years just moved into her own place and is about to turn 18 and graduate high school. I can't believe how fast the time and gone and what an amazing young adult she has become. I asked her to come over for brunch so I can show her some alternative foods to prepare.


I often make myself a tofu scramble over the weekend. It is a great break from my usual green smoothies which I have every weekday morning. Tofu scrambles can be so versatile. You can add different vegetables and different add ins to make every scramble unique. When I am not adding salsa to my scrambles, I usually use Braggs liquid aminos instead of salt to give the scramble more moisture. With the tomatoes from the salsa in the scramble, salt does better.

I am somewhat particular with my scrambles. I would be very annoyed if I went to a restaurant and ordered a scramble and the tofu came cubed. This is simply not a scramble. So make sure to crumble up your tofu for cooking scrambles. This does not need to be disintegrated though, which I have also seen. Having large parts of tofu crumble works really well.


Here is what we had for breakfast and both enjoyed.



Seasoned Potatoes


3 cups Red Potatoes, cut bite-size

1 Tb Olive Oil

2 tsp Fresh Thyme

1/2 tsp Salt

1/4 tsp Black Pepper

1/4 tsp Garlic granules


Combine all the ingredients in a medium bowl. Spread out onto a baking sheet at bake at 400 degrees. Bake 10 minutes, toss potatoes and bake another 10 minutes.




Tofu Scramble


1 lb Tofu

2 tsp Olive Oil

5 slices Tempeh Bacon

8 Mushrooms, sliced

1 small Zucchini, halfed and sliced

1 cup Onion, chopped

1/2 tsp Salt

1/4 tsp Onion Granules

1/4 tsp Garlic Granules

1/3 cup Pineapple Salsa

2 - 4 Tb Nutritional Yeast


Saute the onion in the olive oil in a large pan. Once the onions are golden, add the mushrooms, zucchini and tempeh. Cook for a few minutes to get the vegetables soft. Crumble up the tofu into the frying pan and cook for a few minutes. Use tofu that is meant for frying, but on the softer side. Add the spices, salsa and nutritional yeast. Heat until everything is warm. Serve with potatoes and toast if desired.
